This recipe comes from my friend Danita! They sent me this recipe, and I was immediately psyched to make it because I love zucchini. I recommend buying pre-grated cheese, because I bought blocks and grating it was definitely the most difficult part of making it. I also think this was the most visibly appealing food I’ve made this whole time. I mean, that  quiche looks perfect!

3 cups grated zucchini
1 cup bisquick
1 grated onion (optional)
4 eggs
½ cup grated white sharp cheddar cheese
½ tsp parsley
Salt and pepper (to taste)

 Preheat oven to 350 degrees. 

 Mix all ingredients together. Pour into a greased 8×11 inch glass pan. Bake for 30-45 minutes or until golden brown on top. Let sit for a few minutes before serving.
